HR1087 EPAZOTE: (Chenopodium ambrosioides): (A) Known to the Mexican Indians as Hierba Santa Maria, this pungent annual is essential in Mexican bean dishes to prevent gas. A few leaves of the herb imparts a fuller, richer flavor to cooked beans.

Re growing epazote from seed I have never done so but the stuff grows wild here along the banks of permanent creeks. So I would imagine a looze, well-drained and sandy soil, good water and a fair amount of humidity would be necessary. Also, they seem to thrive in filtered sun/shade.

"Here" is the Sacramento Valley of California where the summers are long and hot and the winters are cool to cold and wet.

Good luck on growing this tasty and strongly flavored herb. Its a wonderful addition to a pot of beans and a nice complement to chile.
